    Molecular Coffee: Coffee without the bean.

    Atomo Coffee is a Seattle-based startup that has reverse-engineered the coffee bean; we’ve analyzed the molecular compounds in a cup of coffee and used this blueprint to design the perfect cup of coffee without using coffee beans.

    Atomo is seeking a Principal Scientist to lead efforts for ideation, innovation and product development for the world’s first coffee made without coffee beans. The Principal Scientist will report directly to the Chief Science Officer (CSO) and focus on core technology and intellectual property development as well as design of experiments and laboratory management.


    • Lead product development projects from concept to commercial feasibility
    • Develop new products that redefine the way we imagine them today
    • Provide technical guidance and bench development for targeted development initiatives
    • Work with CSO to develop intellectual property protection of concepts and processes
    • Ensure completion of development and commercialization success criteria in execution of project work through use of accepted documentation and work processes
    • Provide project management insight that creates the foundation for innovative solutions
    • Act as a thought leader for new ingredients, products and processes that should be considered to deliver project objectives
    • Develop and maintain effective working relationships with key R&D partners


    Critical Competencies: 
    The successful candidate will be experienced in the consumer goods industry and demonstrate the following skills:

    • Identify technical solutions / analytical thinking / problem solving / experimental design
    • Ability to think outside the box and translate vision into reality
      Provide thoughtful leadership on both strategic and tactical aspects of projects
    • Analyze emerging consumer trends and develop insights on product solutions or opportunities
    • Communication and presentation skills (verbal and written)
    • Leadership, team work, initiative and follow through from prototype to full commercial scale
    • In addition, the following requirements will be essential to success in the job:
    • Experience in the beverage industry required, coffee preferred
      Strong knowledge of intrinsic and extrinsic properties of foods/beverages
    • Solid understanding of food/beverage chemistry, analytical testing, formulations and processing used in food manufacturing
    • Understanding of ingredient functionality and interrelationship of ingredients, process, and packaging
    • Experience managing several complex projects and priorities
      Understanding of low acid beverage development and manufacturing processes (e.g. retort, ESL and aseptic technologies) and ability to lead development in this area
    • Expertise to plan, conduct and coordinate new product development initiatives, including demonstrated capability in prototyping and consumer testing methodologies
    • Experience in managing technical challenges and ability to communicate with internal and external customers

    Education & Experience: 


    B.S. or M.S. in Food Science, Food Engineering, Chemical Engineering, Chemistry or related discipline with at least 5 years product development experience in a consumer products company


    • A proven track record in product development of innovative beverages
    • Proven track record in maintaining good working relationships with business partners
    • Experience in leading project teams

    Other Job Requirements:

    • This position will require flexibility in working hours to set-up and complete experiments and scale-up trials
    • Field Travel will be required (primarily domestic & possible international), estimated 25%
