This Startup Is Using AI to Bring “Post-Organic” Farming to the (Urban) Masses

Kale: great for your health, not so great for the tastebuds. Sometimes I wonder if people eat it because they actually like the taste or because it’s so trendy.

That issue may soon become irrelevant, however, thanks a company called Bowery, which is using artificial intelligence (AI) to tweak crops’ color, texture, and even taste.

Billing itself as “The Modern Farming Company,” the New Jersey-based indoor-farming startup will soon open a second facility it says will be the most technologically sophisticated in the world. Sounds like a brazen claim, until you look at what Bowery actually has cooking, er, farming, at its forthcoming facility.

Bowery’s “brains” are found in its propriety system called FarmOS. Using vision systems and machine learning, FarmOS monitors the crops 24/7, collecting data about water flow, light levels, temperature, and humidity. Bowery growers can then use the data to make adjustments to the environment, which will impact color, texture, and taste. The system also alerts growers when plants are ready for harvest.

All of those elements and more roll up into what Bowery founder Irving Fain recently called “post-organic produce”—Bowery commands the entire process of raising produce, from seed to store, and grows crops in a fully controlled environment that doesn’t have to rely on chemicals, pesticide, or human intuition to ensure quality of crops. Sure, the name’s a little much, but the concept grows more promising each year, thanks to factors like cheaper LED lighting, better data analytics, and concepts like vertical farming, which is predicted to be worth $13 billion by 2024.

And while they’re not all using the “post-organic” label, there are plenty of others exploring the possibilities of farming in fully controlled, indoor environments.

Also in New Jersey, AeroFarms has a 70,000-square-foot facility, where it grows bok choi, arugula, watercress, and other greens, including kale. The company closed a $40 million Series D funding round at the end of 2017, bringing in IKEA Group and Momofuku’s David Chang as additional backers.

Meanwhile, indoor farming startups abound in Alaska, where growing produce outside is pretty much impossible in the depths of winter and anything shipped is often close to spoiled upon delivery. Alaska Natural Organics operates a 5,000-square-foot farm that grows butter lettuce and basil. Vertical Harvest Hydroponics designs systems that can be grown inside shipping containers and distributed across the state, including hard-to-reach areas. Both companies are based in Anchorage.

And in Kyoto, Japan, a “vegetable factory” is run by robots and grows 30,000 heads of lettuce per day. The company, Spread, says that it recycles 98 percent of its water and, because the factory is sealed, doesn’t have to rely on pesticides or chemicals.

What sets Bowery somewhat apart—for now, at least—is that it has gone beyond simply monitoring water supply and temperature with its ability to adjust things like taste, texture, and even blemishes on produce. With the U.S. alone throwing out about 50 percent of produce grown annually, a proprietary system like Bowery’s could seriously be leading the way in terms of indoor farming’s impact on overall agriculture.

Video: Grove CEO Gabe Blanchet Has Big Plans for Home Farming

If you’re like me, right now you have a pot of thyme (or rosemary, or basil) clinging to life on your windowsill. No matter how much I water it or how carefully I place it in the sunshine, I cannot keep plants alive—even simple indoor ones like herbs.

This is a huge bummer because, while I love to cook with fresh herbs, they can be quite pricey at the grocery store, tend to wilt in the fridge within days, and aren’t always of the highest quality. But home growing systems like Grove are trying to help those without green thumbs (guilty) transform their kitchens, living rooms, and empty garages into mini indoor farms.

Though they’re not the only ones leveraging IoT to make indoor growing kits, Grove is thinking big to bring home farming systems to wide swaths of consumers. In order to get consumers to install growing systems in their house, they’ve got to a) look nice, and b) deliver good, consistent results. Grove has teamed up with major appliance and furniture companies to check both of these boxes: Blanchet and his team will provide home ag software and seed pods, and their partners will create custom indoor farming hardware to match.

Grove showed off their initial hydroponic home farming system at the Smart Kitchen Summit Startup Showcase in 2016. He returned in 2017 and sat down with SKS founder Mike Wolf to talk about the future of small-scale indoor farming and how he’s able to grow 30-40% of his own food, right at home.

Growtainers Expands with Central Market, Looks to New Crops

For just about a year now, Central Market in Dallas has tested out offering produce that was grown on-site in a Growtainer. Evidently, that partnership has gone so well that Central Market is making the relationship more permanent and expanding it with the addition of another Growtainer.

Growtainers are modified shipping containers that provide a food-safe indoor growing environment. Each one contains a vertical rack system for holding crops, crop-specific LED lighting fixtures, and a proprietary irrigation system. Growtainers come in 40, 45 and 53-foot sizes and are customized for each customer, costing anywhere from $75,000 – $125,000 a piece. The amount a Growtainer can produce depends on the crop.

The Growtainer at Central Market offers leafy greens and herbs grown on-site in a 53-foot container. While he couldn’t provide specific numbers, Growtainer Founder and President Glenn Behrman told me by phone that “demand outpaces supply” for the market’s store-grown produce. “We’ve proven the concept,” he said.

Central Market expanding its relationship with Growtainer helps push the idea of produce grown on-site more into the mainstream. Other players in this sector include Inafarm, which has been installing indoor vertical farming systems at food wholesalers in Berlin. And here at home, indoor farming startup Plenty raised $200 million last year from investors including Jeff Bezos (who happens to run Amazon, which owns Whole Foods).

As on-site farming technology improves and gets cheaper and easier to use, it’s not hard to imagine more stores opting to grow their own fresh produce in-house instead of having it transported across the country.

Behrman says that there are Growtainers all over the world for a variety of agricultural and pharmaceutical customers. He built two Growtainers for the Community Foodbank of Eastern Oklahoma so they could grow their own produce, and he’s talked with both the military and the United Nations about installing Growatiners for them in more remote (and volatile) areas.

One group Behrman hasn’t chatted with is venture capitalists. He laughed when I asked him about funding. “We have no investors, and we’re profitable,” said Behrman. But in the next breath, he said he realizes that his current go-it-alone approach won’t scale. “I think once this Central Market project expands and becomes more mainstream, I will have to look for some funding.”

Until that time, Behrman wants to have Growtainers produce more high value crops. “Lettuce and leafy greens are not that challenging,” he said. Behrman, who’s been in horticulture since 1971, believes Growtainers could be excellent for growing exotic mushrooms that have short shelf lives, or fungi that historically could only grow in particular seasons.

Perhaps after another year or so you’ll see truffles and porcinis grown on-site and offered at Central Market (and elsewhere).
